    OK...here are the knives I work with. I know they aren't the type that everyone here is interested in, but I thought I'd share my "EDC". (Besides my Kershaw). Just kiddin'. But without these, & the good quality of them, my job would be more difficult, & time consuming.

    I was at blade and checking out this flat ground camp knife looking thing, and It was cool light and thin, I asked the guy where the sheath was and he asked if I normally want a sheath for my kitchen knives:bwah:

    I use to work with knives like those everyday for 10 years!
    Traded them for a hammer and a circular saw and never looked back...
    One of the most useful trades in my opinion though. You're always gonna eat, might as well know how to eat well!

    All our kitchen knives are dull as hell. I need to get out the sharpening tools and go to work, but I still haven't mastered it. I need to go to a knife sharpening class or something. I just cannot get them as sharp as I want them.

    My kitchen knives don't have names on 'em. I just call them 'big knife', 'little knife', 'thin knife' and the one serrated knife is called the 'orange slicer'.

    I have an eclectic collection of kitchen knives that range from Harris hand made carbon steel to Wusthof Japanese style knives. I usually take my Old Hickory knives camping. My 4 star Henckles collection I got in Germany are my favorites and use the long slicer the most. The movers broke the tip off and a knife guy re-profiled it with a clip type tip. It's my go-to knife.

    My middle son is a sous chef on Martha's Vineyard. I usually send him a new chef's knife every year. He doesn't complain.

    Our kitchen knives are mix of 4 star Henckels and Wusthuf.

    I have a couple of Krein MicroChefs on order... :)

    We need to get some decent kitchen knives....We have a set of shitty Henkels that perform like they are made of chinese sheet metal. I do have two Spydeco kitchen knives of serrated VG10 that work very well though.
