Hello, i want to make my first knife and i'm kind of lost in the hardening. I have N690 steel, which i bought because it was kind of cheap. I've never done this so i'm worried i can destroy the steel. I don't know much about hardening so i ask you for any tips for beginners and what to start with. Does thick of the steel matter ? And my main question is how do i know my knife is ready to quench ? I don't really know what to ask so any tip will help. Thnank you all !

No....strict temperature controls are critical for using this steel.
