    Kinda jumping on the bandwagon a little late for the Santoku isn't it?

    The wave has already crested on that one. The current rage in kitchen cutlery seems to be super hard carbon steel, single bevel Japanese chefs knives.

    Would be cool to see a American maker getting out front on these.

    NO single edged knives from me.

    These will all be ground on both sides.

    I think I'm pretty up on what is a trend so we'll be fine with these.

    I'll be offering them in both A-2 and Stainless because there is actually equal interest in Super Hard Stainless & Carbon Blades.

    You won't have to wear one of those Meatball Headbands to use mine.

    we all have plenty of time on these.

    I'm making a few sets of each knife in A-2, 12C27 and N690Co for us to test.

    I'm not going to produce any until we get a chance to test drive these.

    There is a lot going on with these knives that makes them a bit different then the Western and the japanese knives and we will tweek them until we get the right combination.

    Some of the sets will be avalible here on JD for passaroiund--before we go into production.

    I really like the top knife in that drawing Mike. I just found out my Global chefs knife is a fake so I was going to get a new chefs knife. Looks like I will need to hold fire before buying now.

    N690 steel is rather good as a stainless.

    We also Should Try the CPM154 new stuff or the RWL-34. I guess they are the same too.

    Most Global knives are balanced with sand in the handle. Thus if you hold it close to your ear you can hear the sand moving.

    The edge of the knife may have had a convex grind. Its hard to tell as its second hand though I can see traces of a convex sharpen.

    Problem is the knife is otherwise perfect. However you can't hear any sand move in the handle.

    Well at least I thought so... I just tapped the handle and now I can hear something moving in the handle when I shake it next to my ear! I think its genuine to be honest now. I have looked with great care at this knife and if its a copy its more than I can do to tell the difference.

    It takes and holds a keen edge, rust spots if you don't clean it, flexes and sings just like genuine Global knives I have used.

    I bought it from evilbay, hence my doubt. This was before the fake problem was apparent. Seller had hundreds of great feedback and certainly was a knife user and collector/chef. If it is a fake, I believe that the seller did not know it could have been a fake. I paid about $40 for the knife and it does work well, though needs a sharpen from me soon!:cove:

    Nope, I am 95% certain this is the real deal.

    Coffin-handled kitchen knives? How do they feel held "sideways" for veggies?

    And I'm lovin' the top couple in that drawing; they don't look _quite_ Eastern, and not quite Western. Not a big fan of Santokus myself, but those look mighty interesting.

    We have to see how much radius we need to put in the handle to get a proper--secure feel in all types of grip.

    Our Rogue Bowie is Coffin handled and most find it very comfortable and very secure no matter how you hold it. The Rogue is only slightly radiused.
