    Kinda jumping on the bandwagon a little late for the Santoku isn't it?

    The wave has already crested on that one. The current rage in kitchen cutlery seems to be super hard carbon steel, single bevel Japanese chefs knives.

    Would be cool to see a American maker getting out front on these.

    NO single edged knives from me.

    These will all be ground on both sides.

    I think I'm pretty up on what is a trend so we'll be fine with these.

    I'll be offering them in both A-2 and Stainless because there is actually equal interest in Super Hard Stainless & Carbon Blades.

    And---------------------

    You won't have to wear one of those Meatball Headbands to use mine.

    we all have plenty of time on these.

    I'm making a few sets of each knife in A-2, 12C27 and N690Co for us to test.

    I'm not going to produce any until we get a chance to test drive these.

    There is a lot going on with these knives that makes them a bit different then the Western and the japanese knives and we will tweek them until we get the right combination.

    Some of the sets will be avalible here on JD for passaroiund--before we go into production.

    I'm just not smart enough to figure out how they work.

    I really like the top knife in that drawing Mike. I just found out my Global chefs knife is a fake so I was going to get a new chefs knife. Looks like I will need to hold fire before buying now.

    N690 steel is rather good as a stainless.

    It seems to be the same as VG-10.

    We also Should Try the CPM154 new stuff or the RWL-34. I guess they are the same too.
