Love the SRV, Cowboy Junkies and the Johnny Cash.
Here's some cover that most people don't realize ARE covers:
Almost everything on Led Zepplin's first 2 albums are (uncredited) thefts of old blues songs (from Robert Johnson to Willie Dixon to John Lee Hooker and Muddy Waters).
They're know as musical geniuses, but they're just a gifted (and unscrupulous) cover band.
Although most rock n' roll is descended from the blues or derived from it, this is different.
Opie and Anthony (on XM202) devoted an hour or so on two separate shows playing the originals and then Led's versions. The lyrics have sometimes been changed SOME, but they're recognizably the same songs.
They credited a couple on their first album, but mostly have themselves listed as writer.
They were a favorite band of mine for years, but I don't have much respect for them any more.

I'll tell you all my secrets, but I lie about my past.
Priest kicked Green Manalishi in the ass for Fleetwood Mac.
Hendrix and "Hey Joe" as well as SRV w/ Look at little sister.
Most of what George Thorogood redoes is awesome maybe not better but a great take on a classic.
Benny- great version of Green Manalishi!!I had forgotton Priest
plated Live Aid.
I think this is ridiculously cool. If I could arrange a cover like that, I'd be content with dying right after someone recorded it. (OK, maybe a little exaggeration for emphasis.)
Make sure that if you listen to this, you turn up your sound a bit. It's important to hear well, as he's layering all sorts of extra tasty bits in there.
