    Zubeng Forge Traditional Gyuto 240mm

    Zubeng Forge Traditional Gyuto 240mm

    Cutting edge: 240mm
    Width from spine to heel: 48mm
    Weight: about 208g
    Steel: Tamahagane
    Handle: octagonal dyed box elder with buffalo horn cap

    blade thickness about 2.2mm at the handle
    mid point of the blade about 2.0mm
    near the tip about 1.65mm

    edge 0.0mm hand ground to the the edge.

    i think there is one left. not the one in the photo.

    what i mean is its the same outer shape but the patterns in the steel is different as all of the knives are. a bit different as each one is hand made from hand made steel and hand heat treated. so it is impossible to be exactly the same.

    never seen tamahagane on kitchen knives before....interesting!
