I used to have an armor plated tongue and eat these things like catsup...but I have been out of prtactice for a while.
now were on the right track. Hot foods. Hot sauce is for tourists.
In Denver, go to Colfax & Sheridan, look for the parking lot with the Hatch green chile sign.
They dont speak english, but they do know what a 1/2 bushel is. Buy yourself a 1/2 bushel of "medium" Hatch green chiles and watch them fire roast those chiles in a cage right in front of your eyes. Now take them chiles home & peel em. Cut off the stem, slit em down the middle and scrape off the burnt skin and scrape out the seeds. Now bag em up in 1 quart ziplock baggies laid flat about 1 cup each. Throw them suckers in the freezer and wait a week for your hands to heal up. (from the heat, not because you pulled a Chri)
Sautee 2 pounds lean pork loin, 2 large onoins, 1 bell pepper in olive oil, garlic, cilantro & sage.
boil 1 bag of Your chiles with 2 quart cans store bought chiles, 1 can whole tomatoes, 1 real tomato, a few thinly sliced carrots.
Combine the 2 and reduce. Thicken with a cornstarch roux to slightly thinner than beef stew.
Serve with tortillas roasted on a gas stove burner.
caution will get hotter with age

some salsas that are worthy of note... if you order yourself some of these, like the hot sauces i mentioned, you'll be glad you did...
on this page is a salsa that is fantastic, i literally eat it with chips for breakfast some times... 'Grilled Garden Salsa' is the name... it has flame roasted red bell peppers, green bell peppers, onions, green chiles, red jalapenos, etc... amazing... not hot... flavour baby, and in spades... Link... the other on this page is 'Fire Roasted Salsa Hot'... both are exceptional... this is a good site to order from btw... both of these are creations of celebrity chef Mark Miller of the Coyote Cafe in Santa Fe Link...... during the summer he opens the upper balcony and serves New Mexican food... i've had these, and several other of his, salsas fresh there... amazing... they are almost as good from a jar...
505 salsa's... truly authentic and very special, a bunch of awards... get the 'hot' it's not that hot... New Mexican green chilie salsa... i go to the restaurant sometimes... Link...
Cervantes, Link..., is a wonderful restaurant off Gibson near the airport in Abq... they have amazing salsas that have won many awards... try the hot, again it's not that hot... you'll see this site again when i do a Chile post... Link...
Gardunos, Link..., is one of the best restaurants in america, the mayor of Vegas asked Dave Garduno to bring this caliber of food to that town, arguably the best food town in the world... so next time your are in vegas go to this one, you'll be glad you did... and they have a salsa to match that... it very good... the hot is pretty hot here... not scorching by any means, these are real salsas for flavour... Link... go to 'Product Overview' and the 'Salsas' to see them at that page...
the El Pinto, Link..., is a world famous restaurant, the Wall Street Journal awarded them the best nachos in America, the salsa is insanely good, Link..., the hot is kinda hot... but man the flavour...
these salsas are all the cream of the crop... if you do not live in New Mexico you've never had salsa this good... period... notice the prices are as cheap as people pay for freaking Pace Picante(which isn't the most terrible thing on earth, but there is so much better) at the grocery store...
if you enjoy truly good food, you will be happy you ordered some of these and tried... i guarantee you'll order again if you do...
i'll do a chile post with a lot of these same pages... actual chile... not cowboy trail food with meat and beans that has become known as chile...

free info: that's a south eastern hot sauce not a southwestern, it has always been made in north carolina... for some reason they put 'texas' in the name to go with the little cowboy character ad theme...
i also like the 'Louisiana' hot sauce, working on a big bottle right now...
