    New batch just finished up

    I just got the rest of these knives finished up for ChefKnivesToGo.com

    Ladder Gyuto

    241mm edge, 50mm tall at the heel
    Thickness - 2.3mm at the heel, 1mm at 1" from the tip
    weighs 200 grams balances 30mm from the ferrule
    Thuya Burl handle with a Ladder damascus spacer and koa ferrule




    Feather Gyuto

    250mm edge, 48mm tall at the heel
    Thickness - 1.6mm at the heel, .8mm at 1" from the tip
    weighs 190 grams balances 17mm from the ferrule
    Amboyna Burl handle, W's damascus spacer and Maple burl ferrule

    268mm edge, 50mm tall
    2mm at the heel, .8mm at 1" from the tip
    weighs 215 grams, balances 34mm from the ferrule
    Maple Burl handle and koa ferrule

    top middle -
