This guy!
This knife is a carbon steel blade with a forced patina on the back. Its is ground on both sides and meant as a all around good general purpose kitchen knife.
Steel - 1/8" thick 1084 (thick enough to handle meats but thin enough to slice and dice!)
Handle material - Gaboon Ebony, Copper,& stabalized Hawaiian Koa
Length - 14"
Handle length - 5 1/2"
Blade length - 8 1/2" (7 3/4" cutting edge)
