I'm gonna make three different kinds of pie for T-Day but I can't decide which ones to make. What's your favorite? What kind do you usually make/eat at Thanksgiving?

I like pumpkin pie when it is done correctly. I have had bad pumpkin pie before. Yuck! Apple rates a close second.

True Story...my dad went to the doctors and the doctor had been asking my dad to shed a few pounds...(which he hadn't) so the doc asked him..if you could have any girl in the world to do whatever you wanted with her or a piece of pie what would you choose....my father thought a minute and said what kind of pie.....:spin:

We put quite a few different pies in the freezer this summer.

For Thanksgiving we will have a fresh turban squash pie, pecan pie and the "other pie" will be a peach and a red raspberry pie.

Hair pie is on the menu tonight.

My fave, and the favorite of about anybody that knows my mom, is a lemon pie she makes. The crust is most of the pie, its whipped eggwhites and sugar baked in a piepan. Then real whipped cream spread on top, then a layer of lemon sauce, and another layer of real whipped cream on top of that.

Melt in your mouth kinda pie. Nobody denies its the best there is.

I'll be making: Pumpkin, Apple Crumb, Cherry, and Blueberry, for the day after. (going out on T-Day)

A couple you forgot about, that if done right, are pretty good too, are Rhubarb, and Sweet Potato pies.

i like pumpkin custard. but i also love pudding pie in shortbread crust!! chocolate or butterscotch is best. ewwwww... my husband absolutely loves mince meat pie. i cannot even stomach the smell of it. reminds me of strong potpurri or one of those mall candle stores. but he will sit and eat a whole pie at a sitting. YUCK!!

I thought that was weird till I tried it.
There's a reason people like it. Its goood.
Its commonly served in resturants w/ melted cheese.

I like cold cheddar cheese on my apple pie. It's an old American tradition.

My absolute favorite pie is rhubarb sans the strawberries. I'm all out though. We put away a lot of blueberries and will do up one of those soon. When I was in Canada I bought a couple of cans of Saskatoon Berries and will try one of those pies. I have a service berry bush in my back yard but it didn't produce any fruit this year.

Do you like Cool Whip or fresh whipped creame? I don't mind either one.

But I do love mincemeat, but its gotta be a good homemade mincemeat pie.

My first roommate after high school, he wanted to get some stuff and take it to his grandma's and let her make strawberry shortcake for us.
I said "Naw man, we can do that at home. Just whip some cream, slice some strawberries, and put it on the shortcakes. Thats all there is to it."

He said "whip some cream? no, thats too much trouble, we use Quip."

So he wanted to drive across town to his grandma's cause putting strawberries and some Quip on a shortcake was too much for him.

I have a killer recipe for mincemeat ....... calls for venison. But I have made it using beaver.....REALLY. :bwah:

There is only one mincemeat pie in existence! It gets passed around by everyone at Thanksgiving time. Another interesting fact: there is only one fruitcake in existence... it gets passed around at Christmas time! I wouldn't lie!!

I picked pecan, because the only thing better than pecan pie is MORE PECAN PIE!! I also like pumpkin pie with whipped cream.

Upside down keylime pie is a close third. (keylime pie with a crunchy merengue crust mmmmm!)

If I have to pick a fruit pie, i'll go with cherry.

My alltime favorite desert food is definitely Tirimisu though!!

that reminds me of the my ongoing struggle to get people to say "Ma-naise" not "May-o-Naise".........

I'll keep the Puh-CAHN in mind when pronouncing it, although I don't care to eat it. They do look festive though. :spin:

One that we used to make at the bakeries, while may sound gross, is really good.

You take 1/2 of a carrot cake and put a pumpkin cheese cake on top of it. YUMMY!

Hell Deadeye, canned peaches work well and they are easy to use. I hear some people use the liquid in making the dough for crusts. When I lived in NOLA I could satisfy my cravings with a local fried peach pie made by Hubigs

Never tried canned peaches - duh - but I see how it could work really well ... slow boil cornstarch with the liquid for a minute or two, add the peaches and stir off-burner for about a minute, then stick it right in the pie shell & bake as usual - don't use much sugar ... thnx zz

You need to try my peach cobbler. I make it with canned and fresh peaches that are mixed together. You can't beat it with a stick.

I like apple pie but with the the French topping. I'm going to make one today just for the heck of it. I use the Betty Crocker recipe. I pretty much BC for all my pie needs.

My mom gave each of her 4 daughters a Betty Crocker 3-ring notebook cookbook - it's still my standard for the basics.

I think Xray married me for my apple pie - I make apple pie in a cookie sheet/sponge cake pan - cut in squares - he ate pie with his coffee every morning our first 4 or 5 years together. Now he likes homemade biscotti with his coffee ..

Maybe you should send Deadeye Dick the recipe for 'dark chocolate mouse' just in case she finds another one in her toilet. I think I'd go for the Key-lime pie myself but there is no accounting for people's taste. :jdwink2:

X and I are muy sympatico on this one.
I refer to them as " breakfast squares " and it don't matter if it is pie or cake .........I gotta have a sugar fix to get me rolling.
I voted for pecan here , but you are making the " big three " as far as I am concerned.
Any of those served warm with a scoop and 1/2 of good vanilla ice cream knocks me out quicker than a quaalude.
Blame it on the triptophen in the turkey if you want , but pie is like the last shot of bourbon after a night of drinking..........it is soon sleepy time.

A good nog is hard to find. What do you like in it? I use some cheap French brandy.

My mother gave my wife this BC cookbook, I use, when we got married. We also got a Joy of Cooking for a wedding present. I love that book.

I made apple sauce the other day and used the recipe out of a Better Homes and Garden cookbook my mom had when I was a yonker. It came out pretty good. It's better when it ferments a bit. I put it on ice creame.

Marie - we gotta bake together sometime! I also made 5 dozen tiny chocolate cupcakes, biscotti, and dozens of white chocolate leaves for when I frost the cupcakes - plus dipped pecan halfs 2/3's in chocolate to put with the white chocolate leaves... Are we crazy ... :ropeman:

i like egg nog, too. southern comfort puts one out. i like the chipwich brand. on xmas eve, after the kiddies go to bed, we crack out the bacardi 151 and eggnog and get the partAy started!

The trick with this pie is having the egg white crust end up where its crumbly and melts in the mouth, rather than chewy.
I need to get the recipe down on paper.

No she knows it, and I'm not sure if its still in her old recipe box or if I need to get it written down.
She showed my uncle how to make it a few weeks ago.

See she's getting pretty old and her memory is getting weak, so folks in the family who know the pie are coming around with "Uh, could you show me how to make that pie?"

I've made one before, its not hard. Fresh eggs, I know you need the eggs to be fresh. She uses a double boiler for the lemon filling.
And even when the crust turns out a little chewy at the edge its still a great pie.
I'll look into it right away.

I'm fighting that same battle with my inlaws here in Colorado. Not a damn pecan tree anywhere up here and yet they think THEY are the ones that know how to pronounce it!

It's the sort of thing I would have in a pub/bar with a couple of pints of beer, but, here is a good recipe for you.

Ingredients
Main:
115g (4 oz) plain flour
salt and fresh ground black pepper
900g (31 oz) stewing steak, cubed
4 tbsp Olive Oil
2 Onions, chopped
1 garlic clove, chopped
3 celery stalks, finely chopped
2 Carrots, peeled and chopped
2 Parsnips, peeled and chopped
800g (28 oz) tinned chopped tomatoes
600ml (21 oz) Guinness
225g (8 oz) button mushrooms
750g (27 oz) Puff Pastry
1 egg, beaten

Method
1. Season the flour with salt and freshly ground pepper. Coat the stewing steak in the seasoned flour. Heat the olive oil in a frying pan.

2. In batches, fry the beef until browned. Using a slotted spoon transfer to a casserole dish. Re-heat the frying pan and fry the onion, garlic and celery for 5-10 minutes until softened and fragrant. Add the onion mixture, carrots and parsnips to the casserole.

3. Add chopped tomatoes, Guinness and mushrooms. Season with salt and freshly ground pepper. Bring to the boil, reduce heat, cover and simmer for 2 hours, stirring now and then.

4. Preheat the oven to 190°C/Gas 5. Divide the beef stew among 6 small individual pie dishes. Roll out the pastry and top each pie dish with a puff pastry lid, wetting the rims of the pastry dish with water to help the pastry to stick.

5. Brush the pies with beaten egg and cut a slash in each one. Bake for 45 minutes until the pies are golden-brown. Serve.

oooohhhh... ice wine and riesling!!! my kinda guy! have you ever had Berncastler Doctor Riesling Spatlese??? it is THE best. 1995 was my fav year for it. the kabinett is good, too. but i prefer really sweet, late wines.

Here's one. Biscuits are cookies :madaddy:

Ingredients

* Tin (~400g) of condensed milk (NOT evaporated milk!)
* Three large bananas
* One packet of McVities Chocolate Hob-Nobs (whatever you'd use for cheesecake - Ropes)
* Half-pint of double cream, or whipping cream
* 2 tablespoons margarine (or butter)

Method

Crush the biscuits in a freezer bag with a rolling pin until they are reduced to crumbs. Gently heat some margarine in a saucepan until liquid (or just leave some out at room temperature to soften). Pour crumbs and liquid/soft margarine and mix in with the crumbs until they start to bind together. Transfer the biscuit crumbs to a round dish (a large Pyrex dish is good) and pat with a spoon so that they cover the base. Place in the fridge to set. Put the tin of condensed milk in a pan of boiling water (NB- don't open the tin first!) and allow to boil for 2 hours . You should put a lid on the pan to prevent all the water boiling off. When done, remove the tin and leave to cool a little (you could pour cold water on it to cool the outside). When cool enough to handle, open the tin carefully - the condensed milk will have caramelised and may well shoot out the opening. Pour/spoon the toffee from the tin onto the biscuit base of the Pyrex dish. Place back in the fridge to cool. Slice the bananas and arrange them on top of the toffee. Whip the cream until peaking, then fold on top and smooth out. Dust with chocolate powder for effect. Keep in the fridge until needed, covered with cling-film.
Tips

You may want to make the biscuit base with a lip (a bit like a flan or pavlova). Start the condensed milk boiling, then do the base. Have a rest for a while, then pour out the toffee and start on the cream and bananas. Serve cut into wedges in a bowl.

I thought we were suppose to switch over to it at one time. Ah, you meant Soupy, I went to edit mine into pecks, bushels, chains and fathoms but apart from a tin= a can, there isn't much measuring. American pints are smaller than proper pints so that will be 10 oz of cream.

I made a French apple pie today. It wasn't my best offering as I have a cold and have been medicating with vodka. I tried to stuff a nice incher in a eight inch pie plate. It is pretty thick and should be tasty. We haven't eaten yet and I'm gettin anxious and loaded.

My son told me the pie was good. He ate one piece and took the rest home with him. I'll have to make another one this weekend. The sponge ware pie plate comes from that place on the Ohio/WV line. We have a bunch of their bowls and such.

My daughter-in-law made two nice turban squash pies and left one with me.

The trick with this pie is having the egg white crust end up where its crumbly and melts in the mouth, rather than chewy.

How many use lard in their pie crust? I was told that bear lard makes the best pie crust but haven't killed a bear in a long time. Lard makes the best crusts.

We need to start a new poll and thread for that one. It is hard to find a decent pizza out here. It's not like the east coast or Chicago. There is one place that makes good pizza but it is clear over by the Point Defiance Bridge and too far to go without a designated driver. A good calzone is hard to find as well.

Ok I got this recipe from my mom.
Its called a Lemon Angel Pie.
So I googled it and lo and behold, I found it!

this is the same pie.
The only differences in my mom's recipe is she does not use the salt or the butter.
She uses 1/2 tsp of tartar instead of 1/4.
She uses 1/2 cup sugar in the filling instead of 1/3.

Eggs should be room temp.
And not a smidgen of yolk or anything else should be in the eggwhites when you beat them.
Refrigerate overnight.
And its a real crapshoot as to whether the crust ends up chewy at the edges. Chewy is not what youre going for.

My favorite is cheesecake, even though it is named after a cake, it is still a pie.

plain cheesecake is great. Marie Calendars carries a variation called Kahlua Cream Cheese which is fucking delicious with a dark crust and a couple of dark swirls in the top of the pie. My S-I-L made one last year for TG that was a pumpkin cheesecake, and that was pretty awesome as well. Cheesecake in general is my favorite, although i have never had a keylime pie. A close second is banana cream pie.

They only sell wholesale. They supply the top restaurants and some hotels in Vegas. They also make the BEST brownies!! In the old days in OB, Sam's Cheesecakes went well after honey oil.

Here you go. New York Cheesecake. Not politically correct, but this is from the Frugal Gourmet. It is cheesecake the way I like it. Not too creamy. I like a little solidity to mine. I like it straight up, but my wife likes fresh raspberries or strawberries over it. BTW you do need a spring pan for this.
